Oven Baked Chicken Parmesan, womansaga

Some nights you just crave some good Chicken Parmesan. However, going out can be  difficult or the restaurants that serve awesome chicken Parmesan are way too expensive. It is very difficult to find a perfect Chicken Parmesan! Generally, the chicken we eat out is poor in taste, either the crust is chewy or the chicken is hard or crunchy noodles that stick together.. blah!

But, now you need not torture yourself by eating the bad Chicken Parmesan. Luckily, I have the best chicken Parmesan recipe that is surprisingly easy and so flavorful. The crust is crispy and the chicken is tender. The marinara or spaghetti sauce it goes with is not store bought but also homemade. It is actually a family recipe that has been passed down that is absolutely spectacular.

I did modify the traditional methods to make it more health or summer friendly, so it only really contains 2 Tbsp of flour really and the rest is all good. By substituting bread crumbs or panko for ground almonds which happens to add a very nice subtle nuttiness.

In so many recipes I found that chicken Parmesan is baked in part crumb part Parmesan cheese and I didn’t do that. I cannot tell you how many times I have wanted that cheesy pan-fried goodness, but it has never worked for me. The cheese always sticks to the pan, and the bread crumbs fall off, and it turns into a huge mess. So I just kept with the cheese (which is plenty of cheese) on the top of the chicken.

Also, instead of using spaghetti noodles, I tried using zucchini noodles, and it was great. Easy and just as yummy, not to mention much quicker to cook than the pasta.

As for the sauce, a main reason I decided to make mine from scratch, not only because most of the times it just tastes better, but also because I was able to play with the thickness more. The sauce recipe provided has the right consistency that is not too watery, leaving your chicken Parmesan not soggy and messy. It stays where it needs to stay and the chicken retains the crispness.

Things Needed

  1. A potato peeler
  2. Cheese grater
  3. Whisk
  4. 1 shallow bowl
  5. 1 medium sized to large saucepan
  6. 1 large frying pan
  7. 2 large flat plates
  8. A large baking sheet

Tomato Sauce:

  1. 1 (10-0z) can of tomato paste
  2. 1 (15-oz) can tomato sauce or tomato puree
  3. 2 diced tomatoes
  4. 2 chopped onions
  5. 4 cloves of garlic
  6. 1.5 stalks of chopped celery
  7. ½ chopped bell pepper
  8. 1 bay leaf
  9. 1/2 Tbsp of fresh oregano
  10. 2 Tbsp fresh parsley
  11. 1/ 2 tsp Worstechire sauce
  12. 1 packet of sugar


Fry celery, onion, and bell pepper until soft or onions are translucent. Add tomato paste, once the paste looks brightened, add 1 cup of water. Add tomato sauce and tomatoes. Sprinkle some oregano, parsley, salt and pepper for taste, bay leaf, sugar, and worstechire sauce. Simmer sauce, stirring occasionally for 2-3 hours.

As the sauce is cooking, prepare the rest of the meal.

Take the zucchini or baby marrows and using the potato peeler, create zucchini noodles. Set aside.

Zucchini noodles

Cheese topping:

  1. 1 large block mozzarella cheese
  2. 1 block of Parmesan cheese

Cheese Toppings

Grate ½ cup of mozzarella cheese, and cube ¼ cup mozzarella cheese. Also grate ¼ cup Parmesan cheese. You can mix this with the mozzarella cheese. Set aside.

Chicken Parmesan Ingredients:

  1. 1 pound of chicken breasts
  2. 2 eggs
  3. 2 Tbsp flour, or more
  4. 3-4 cups of Almond flour
  5. 1 tsp ground garlic
  6. 1 tsp paprika
  7. 1 tsp basil, dried
  8. 1 tsp salt
  9. 1/2 tsp pepper
  10. 1 cup Extra-virgin olive oil


  1. Preheat the oven to 450 degrees Fahrenheit or 230 degrees Celsius. Grease a baking sheet large enough to hold all the chicken breasts.
  2. On a flat and even surface place a chicken breast in a zip-lock or sandwich plastic bag and hammer with the smooth side of a meat hammer to a thickness of about ½ an inch. Repeat until all the chicken breasts are ½” thick. Season each breast with salt and pepper.
  3. image3In a shallow bowl, whisk the eggs. On a large plate, mix the almond flour, basil, paprika, garlic, salt and pepper, set aside.
  4. Sprinkle the chicken breasts evenly with flour. Dip the chicken breast into the whisked egg. Once dipped, press almond flour mixture into the chicken breast. Repeat for each chicken breast, then set aside for approximately 15 minutes.
  5. Heat the olive oil until it begins to shimmer, ensuring that the oil is hot. Cook each breast until golden, about 2 minutes per side.  image5
  6. Place chicken on the baking sheet and top each breast with about 1/3 cup of the tomato sauce, then the grated cheese mixture of mozzarella and Parmesan, and cubes of mozzarella. Bake for 10-15 minutes, or until cheese has melted and chicken is fully cooked.
  7. image6Once chicken is finished, add an additional 2 Tbsp to ¼ cup of tomato sauce to zucchini noodles, and top with baked chicken Parmesan.
